Mother’s Day Brunch Recipe - Savory Farmer’s Market Dutch Baby

Ah, Mother’s Day! A special day to celebrate and show appreciation for the special moms in our lives. While it is always fun to go out for a Mother’s Day brunch, planning a delightful brunch at Mom’s house is a fun way to make the day extra special.

If you need an easy recipe that will impress everyone at this special brunch, look no further than the Dutch baby pancake. Also known as German pancakes, these oven-baked pancakes are made of simple, staple pantry ingredients, but make a dramatic presentation sure to please Mom. Dutch babies are so easy to personalize and taste great whether they are done up savory or sweet.

Make your Mother’s Day brunch truly special with the following savory Dutch baby recipe!

Savory Farmer’s Market Dutch Baby

For the Dutch baby:
3 eggs
½ cup flour
½ cup milk
½ tsp. salt
½ tsp. thyme
½ tsp. garlic powder
4 Tbsp. butter

For the topping:
1 cup cherry tomatoes
½ medium red onion, thinly sliced
1 small zucchini, chopped
2 cloves garlic, minced
1 Tbsp. olive oil
Salt and pepper, to taste

Preheat oven to 425°F. Combine eggs, flour, almond milk, salt, thyme and garlic powder in a blender and blend until smooth. In a cast iron skillet, place the butter and put into the oven to melt the butter. Remove the skillet as soon as the butter is fully melted but before it starts to brown or burn. Pour the batter over top of the melted butter and place the skillet back in the oven to bake for 20-25 minutes. It will be done with the pancake is all puffed up around the edges (sometimes in the middle a bit too) and it has a nice golden brown color to it.

While the Dutch baby bakes, make the filling by placing the chopped veggies, olive oil, and minced garlic into a skillet. Sauté on medium heat for about 10 minutes or until the onions become translucent. Salt and pepper to taste.

Once the Dutch baby is done, top it with the sautéed veggies, and fresh parsley, avocado, and fried eggs. AND ENJOY!!
